Norwegian Apple Bake

Ingredients:
2 eggs
1 1/4 cups sugar
1 stick unsalted butter
2/3 cup milk
4 cooking apples, cored, peeled, and sliced
1 cup plus 2 tablespoons self-rising flour
1/2 teaspoon grated nutmeg
heavy cream or vanilla ice cream, to serve
A shallow baking dish, 12 inches in diameter, greased
Preheat the oven to 350 degrees F.
Directions:
Put the eggs into a large bowl, add 1 cup of the sugar, and whisk until
stiff and creamy. Put the butter and milk into a saucepan and heat gently
until the butter has melted. Meanwhile, arrange the apple slices in the
prepared baking dish.
Gradually add the hot milk and butter to the egg mixture,
whisking well. Fold in the flour to make a smooth batter. Pour the mixture
over the apples, then sprinkle with the remaining sugar and the nutmeg. Bake
in the preheated oven for 20-25 minutes, or until puffed and golden. Serve
hot or cold with scoops of thick cream or vanilla ice cream.
